How It Started
Cafeheeya began in 2023 with a warm mission: to craft wholesome, high-quality baked goods that everyone can enjoy without worry. Inspired by Asian culinary heritage, we thoughtfully incorporated plant-based ingredients like tofu and rice to reimagine traditional desserts into allergy-friendly, nourishing treats.
As our journey naturally evolved, so did our passion for single-origin perfection. Today, Cafeheeya blossoms into SONELÉ—a dedicated boutique born from our deepest pride and signature creation: the Tofu Canelé.
By blending the delicate, silky richness of fresh soft tofu with the timeless, caramelized crunch of a classic French pastry, SONELÉ represents the pinnacle of our craft. We are moving forward with single-minded devotion, focusing entirely on this one perfected creation to bring you an unparalleled dessert experience.
Our Special Ingredients
While traditional Canelés rely heavily on egg yolks, butter, and refined sugar, we craft our signature vegan Canelés using fresh silken tofu, organic soy milk, and finely milled rice flour. These premium plant-based essentials create our unique signature texture with a delicate, crispy caramelized outer crust paired with a wonderfully silky, moist center.
From Part-Time Employee to Founder
While working at a Banchan store in NJ, Heeya often met customers with family members who had allergies to dairy, gluten, nuts, or eggs. She was inspired to help these families enjoy cakes and desserts together, creating inclusive treats for special.

SONELÉ is a blend of "Soy" and "Canelé," the classic French pastry we lovingly craft. We created this name to celebrate our signature, 100% vegan Canelés, crafted with soy and rice flour to offer a nourishing delight that brings warmth and care to every single bite.
